Draft: Resolve "reintroduce/update Sentry tracing (and update deps)"

Closes #26 (closed) and

  • ensures all the tracing-related env variables are propagated through ansible and docker compose
  • ensures LLM api/keys are specific, still keeping the OPENAI_* fallback for now (TBD we should keep the fallback settings to most capable model)
  • fixes somehow missing mkdocs dependency (it would break the build)
